	Abstract: В статье рассматривается функционирование заимствованной лексики в англоязычных гастрономических текстах второй половины XIX века, наличие которой в языке обусловлено длительной межкультурной коммуникацией и взаимовлиянием кулинарной культуры. Целью статьи является выявление особенностей употребления заимствований в кулинарных текстах. Исходя из цели исследования были поставлены следующие задачи: дать семантическую характеристику заимствованным словам; проанализировать их виды в английских гастрономических текстах. Предметом исследования выступает заимствованная лексика в рецептах из “The Book of Household Management” И.М. Битон. В статье делается вывод, что основной лексический пласт заимствований в кулинарных текстах представлен галлицизмами, который зачастую употребляется в качестве кулинарно-профессиональных терминов. ... : The article examines the functioning of borrowed vocabulary in English-language culinary texts of the second half of the 19th century. The presence of this vocabulary in the language is due to long-term intercultural communication and the mutual influence of culinary cultures. The purpose of the article is to identify the aspects of the use of borrowings in culinary texts. Based on the purpose of the study, the author sets the following objectives: to provide a semantic characteristic of borrowed words; to analyze their types in English culinary texts. The subject of the study is borrowed vocabulary in the recipes from ”The Book of Household Management " by Isabella Mary Beeton. The article concludes that the main lexical layer of borrowings in culinary texts consists of Gallicisms, which are often used as culinary and professional terms. ...
