Abstract:
The present research deals with Elementos de higiene privada (1846), a treatise by Pedro Felipe Monlau about hygiene from the late 19th century. Our main objective is to study the culinary lexicon within this work, particularly the third section, dedicated to food science, where several intriguing chapters can be found, as the one titled “Preparation and Preservation of Food” (pp. 150-164). In accordance with Eberenz (2014: 30), apart from focusing on the culinary treatise, a historical lexicographer has to pay attention to a more varied textual typology. Particularly, we aim to organize the documented specialty terms in order to revise their presence, treatment and evolution in the Spanish lexicographic tradition. ; En esta investigación nos aproximamos a un tratado sobre higiene publicado a finales del siglo XIX, Elementos de higiene privada (1846) de Pedro Felipe Monlau. Nuestro objetivo consiste en estudiar el léxico culinario incluido en esta obra, concretamente en la sección tercera, dedicada a la Bromatología, donde se encuentran capítulos tan sugerentes como el titulado “Preparación y conservación de los alimentos” (pp. 150-164). Siguiendo a Eberenz (2014: 30) consideramos que, además de centrar el interés en los tratados culinarios, un historiador del léxico ha de prestar atención a una tipología textual más variada. En particular, nos disponemos a organizar las voces de especialidad documentadas para después revisar su presencia, tratamiento y evolución en la tradición lexicográfica del español.
